The Golden Month

Joëlle and Pauline’s residency explored the golden month, a cherished period following childbirth in many traditional cultures, during which maternal health and nourishment are paramount.

The associated traditions are built upon the dual foundations of preserving ancient wisdom and embracing modern well-being. This philosophy echoes in the residency as culinary legacies are upheld while embracing contemporary tastes and techniques.

The recipes of the past evolve reflecting the spirit of innovation while staying rooted in the respect for ancestral flavours.

For their 3-day pop-up at La Station, each dish on the 5-course menu was a heartfelt ode to the traditions, connections and nurturing care that define the golden month experience. Just as the golden month embraces the new mother, this menu embraced the essence of generations past and present woven together in a tapestry of flavors and love.

Then, with a celebratory final meal at La Becque, Joëlle and Pauline brought people together around a 24-hour broth in a gargantuan copper cauldron, stimulating feelings of conviviality, warmth and restauration.
