Marta M. Soldevilla

Research Residency

The Canapé

February - May 2023

Barcelona-based designer Marta M. Soldevilla invites you to navigate within the aesthetic composition of The Canapé.

Related to the Amuse-gueule, Amuse-bouche, Bouchée and Smørrebrød, The Canapé is a food eaten in one single bite. This edible small construction first appeared during the Nouvelle Cuisine movement around 1973, but started to become unfashionable during the late 80s. Only recently are they beginning to be reintroduced into chefs’ culinary experiences.

From the design side, Marta understands canapés as tiny sculptures that evolve senses. Since they are independent from the platter they become an object in themselves. These objects are a scrupulous balance of shape, colour and taste including the exact amount of everything needed to create a taste experience in one bite.

During the residency, Marta dissected the canapé into four elements that compound the final shape, dividing in the 2D and 3D characteristics of the piece to the coating and decoration of it. The work examples showcased today are outcomes of the last two categories focusing on the landscapes created on the top of the pieces with jelly or icing.

Working under the name of Sol dela villa, Marta is a fashion designer who’s previous work has been inspired by the formalities and aesthetics of food. Her interest in the aesthetics of the food field have led her to launch Bastida for work, a line of workwear for chefs and restaurants.
